This column is a continuing series by Chef Peter X. Kelly of Xaviars Restaurant Group.

YONKERS, N.Y. -- Last week, Rockland County Executive Ed Day announced mandatory water restrictions that included only serving water upon request at restaurants.

The lack of rainfall and high temperatures has created a water emergency in the county and we all need to do our part to cut back wherever possible.

Of course, our water restrictions don’t cause a great amount of change to our everyday lives but what we take for granted others may never have. Case in point: My son, Dylan, just returned from India. He was there as part of a team, building and installing water purification towers near several schools so that young students and people from the villages would have access to clean drinking water.

While I am extremely proud of Dylan to have devoted a portion of his summer to helping those less fortunate, I would like to encourage all of us to conserve water right here in the Hudson Valley where and when we can.

Perhaps a shorter shower or one less car wash this week might save several gallons. Only watering lawns when absolutely necessary or maybe fixing that leaking faucet you’ve been putting off for weeks. These are small inconveniences compared to the struggle to provide clean drinking water to major portions of the world population.

Thanks to organizations like Planet-Water and its Executive Chairman Nick Hill, clean water is getting to the neediest among us. Go to www.planet-water.org/ for more information.
